Last of Processing 2016-Snakin Sticks

Always wanted to try some venison slim jims so got me some High Mountain Snackin Stick mix-hickory blend. Used as directed-no extra fat, etc. Curing in the fridge right now to go in the oven or smoker tomorrow morning. Did learn the meat needs to be really cold or it takes forever to push through the grinder once it starts warming up. Plus, you lose about 25% that’s leftover in the feeding tube that you can’t push through. If it turns out good might have to try the jerky blaster I bought last year and haven’t used. Only did 5 lbs as a tester so if good i have a little more venison to experiment with. Results tomorrow by noon.  Only positive is turkey season is just a few weeks away and i love chicken fried wild turkey breast with some cream gray, fries, and Texas toast. Kinda like Dairy Queen chicken strip basket but sooooooo much better!! Finally caught up on my posts so come on turkey season.
